Peanut Butter Pie

My mother recently shared with me a recipe one of her dear friends shared with her.  Having now tasted the results, I cannot believe either of them so willingly shared this recipe.

I must confess, I have not actually made this pie myself.  But I have tasted it and am now compelled to share it with you.

Peanut Butter Pie

1 – 8 oz cream cheese

1 cup icing sugar

3/4 cup peanut butter

1 tub Cool Whip

1 graham or chocolate cookie crust

Blend the softened cream cheese and icing sugar together

Add in peanut butter and beat well

Fold in Cool Whip

Spoon into prepared crust and freeze

Keep frozen.  Slice and serve as needed.

If you would like to lighten this up at all, the regular cream cheese, peanut butter, and Cool Whip can all be swapped for light versions of the same.  If you are using smooth peanut butter, I would recommend adding chopped peanut when the peanut butter is added.  A chopped peanut butter-based chocolate bar (like Crispy Crunch) makes a beautiful topping. This pie will serve 6-8 people.  It is extremely rich, so I would recommend cutting only small pieces.  Hey, you can always go back for seconds.  That is, if there’s any left.
