In the words of Lightning McQueen:
We have all heard how important breakfast is and it really is “the most important” meal of the day. Skipping it of course means you’re not getting the nutrition you need to start your day off on the right foot and it actually makes it harder to lose weight.
All that great stuff aside – sometimes its just about a really delicious and filling breakfast. You know for those days when you have important meetings or a long morning of hard work. It has to be filling, packed with protein and of course lightning quick (Ka-chow)!
While this is not as quick as an assembly line breakfast sandwich from the drive thru, it’s way more delicious and only takes a few minutes extra if you prep ahead of time. Really, the only preparation needed is to have the right ingredients handy and ready to go.
In this case I wanted to add a little something different so I grabbed some of Mama’s excellent pickled hot peppers from the cellar and paired them with a few cloves of pickled garlic. Yes that is a lot of pickled flavour and I am okay with that, as they say, your mileage may vary. For me the combination of these pickled goodies and egg is really fantastic – it’s a yin and yang harmony of balance sort of thing and with all the other tastiness going on in this creation it stands up well. So, I roughly chopped these yummy extras up and added them to the eggs, yes 2 of them for good measure and extra tummy fullness. Than I sent this bowl for a little zap in the microwave – do not forget a little salt and pepper as well.
You of course need to start the assemble with a Dempster’s English Muffin. You know the ones with all the wonderful nooks and crannies. I do not know about you, but for me these English Muffins bring back found memories of many a breakfast while growing up. You see back when I was a kid one of my favourite breakfasts was a toasted English Muffin smothered in butter and peanut butter – the more drips the better!
So back to my newest more adult creations – Did I mention that I was seeking to out-do my last guy sandwich?? So I needed a little extra ummmph in the form of sausage rounds and 2 eggs to help make this nice and filling – it also ended up rather tall. In fact the kids were very impressed with this creation and where so excited about how it looked.
