Fairy Pumpkin and Banana Muffins

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup brown sugar , packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/2 cup chocolate chips
  • 3/4 cup Fairy Pumpkin (or substitute any sweet squash variety)
  • 2 tablespoons dark maple syrup
  • 1/3 cup ripe bananas , mashed
  • 3/4 cup buttermilk
  • 1/4 cup butter , melted
  • 1 large egg , beaten

Instructions

  1. Preheat oven to 400 F
  2. Thoroughly combine all dry ingredients and chocolate chips together in large bowl; set aside
  3. Combine remaining ingredients together, being sure to incorporate all ingredients well
  4. Add wet to dry being careful not to over mix; flour specks should still be visible
  5. Divide equally between 12 lined muffin cups
  6. Bake approximately 20 minutes, making sure tops are golden brown.

This fall, I managed to get my hands on some Fairytale Pumpkins from our neighbours over at Cleaver Orchards. Also known as Jamaican Pumpkins, or Musquee de Provence, they are darker and sweeter than the butternut and buttercup squash that I usually cook and bake with. They are also huge – one pumpkin will yield A LOT of muffins. ¬†Named because they resemble Cinderella’s fairytale pumpkin carriage, they add a richer flavour to baked goods.
These particular muffins have much less added sugar in them than most muffins and will not last on your counter very long before starting to grow fuzzy things. I would say 3-5 days maximum, depending on the weather. As with almost any muffin though, they freeze well, so go ahead and bake up a double batch to have on hand for school lunches and afternoon friend drop ins.
