The Earl of Berry Fizz Mocktail

Before strawberry season entirely passes you by, you need to grab some local berries and cook up The Earl of Berry Fizz Mocktail. A great use for overripe strawberries that are getting past their prime, it will keep in the fridge for about a week.

Earl of Strawberry Fizz Mocktail

Ingredients

  • 3 cups Strawberries, hulled
  • 5 cups water
  • 3 black tea bags, preferably Earl Grey
  • 1 tbsp honey
  • 1-2 tsp ground cardamom

Instructions

  1. Slice strawberries and add all ingredients to a heavy bottom pan

    Bring to a boil over medium heat.  Allow to cook approximately 5 minutes.

    Remove from heat.

    Once cool, remove tea bags and use an immersion blender to thoroughly emulsify the mixture

    Strain (if desired).  Pour into air tight container and store in fridge for up to a week.

    To serve, divide between 6-8 glasses and top with ginger ale or club soda

Strawberry Cardamom Mocktail

Be forewarned – if you tend to ‘forget’ about little used spices in the back of your cupboard, you will want to give your ground cardamom a good sniff before using it.  It ages very quickly and rapidly loses it’s punch.  If you happen to have cardamom pods on hand, lightly crush 4-6 of them to the mixture before boiling.  Just be sure to remove them before blending.

I don’t mind the strawberry seeds in my drink, so I didn’t bother to strain it at all.  For those of you who do, you’ll need to tack on some extra time to push the mixture through a fine sieve.  To me, it’s really not worth the hassle.  If it is to you, have at it.

While any black tea will do, the Bergamot in Earl Grey tea works nicely with the cardamom.  I really wouldn’t recommend an orange pekoe, but after that, the sky’s the limit.

As far as how many servings this makes – it makes as many as you need it to.  It makes about 6-7 cups of liquid (without seeds removed).  I counted on half a glass of syrup and half a can of ginger ale per person.
