One-Bowl Perfect Chocolate Bundt

Ingredients

  • 1 cup semisweet chocolate chips
  • 3/4 cup unsweetened cocoa powder (not Dutch process)
  • 1 tsp espresso powder
  • 3/4 cup boiling water
  • 2 cups brown sugar, packed
  • 1 tsp baking soda
  • 1 tsp salt
  • 5 large eggs
  • 1 cup sour cream
  • 3/4 cup butter, softened
  • 1 tbsp vanilla
  • 1 3/4 cup all purpose flour

Instructions

  1. In a large bowl, combine chocolate chips, cocoa powder, and espresso powder. Add boiling water and whisk until smooth. Allow to cool approximately 20 minutes

  2. Preheat oven to 356 F; Spray 10 Bundt or tube pan with non-cook cooking spray

  3. To the bowl, add all ingredients except flour. Beat using an electric mixer for 2 minutes.  Add flour and beat an additional minute on medium.

  4. Spread batter evenly into prepared pan. Bake approximately 60 minutes. 

  5. Allow to cool 10 minutes before inverting onto wire cooling rack
