In a heavy bottom pot, combine 1 cup of water with thinly sliced ginger
Boil to reduce liquid by half, approximately 3 minutes
Strain out ginger and allow to cool.
Stir in honey, salt, and juice from 2 lemons.
Refrigerate in clean jar in the fridge.
To serve, fill a glass with ice. Divide syrup between 4-6 glasses. Top with club soda or ginger ale. Serve immediately
Syrup will keep, in a closed container, in the fridge, for about a week
