Fairy Pumpkin and Banana Muffins

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup brown sugar , packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/2 cup chocolate chips
  • 3/4 cup Fairy Pumpkin (or substitute any sweet squash variety)
  • 2 tablespoons dark maple syrup
  • 1/3 cup ripe bananas , mashed
  • 3/4 cup buttermilk
  • 1/4 cup butter , melted
  • 1 large egg , beaten

Instructions

  1. Preheat oven to 400 F
  2. Thoroughly combine all dry ingredients and chocolate chips together in large bowl; set aside
  3. Combine remaining ingredients together, being sure to incorporate all ingredients well
  4. Add wet to dry being careful not to over mix; flour specks should still be visible
  5. Divide equally between 12 lined muffin cups
  6. Bake approximately 20 minutes, making sure tops are golden brown.
